Ingredients
- 1 x sweet potato
- 200 g kidney beans
- ½ x avocado
- 1 clove garlic
- ½ x chili
- 1 x spring onion
- ¼ tsp salt
- ¼ tsp black pepper
Method
- Cut the sweet potato in half, and bake it either in the oven at 200 degrees celsius for 45-60 minutes, or in the microwave on the highest intensity for 10 minutes.
- Take the sweet potato out of the oven and dig a small hole for one egg in each half. Crack the eggs into each hole and put them back in the oven. Bake for about 10 minutes.
- Make the bean guacamole. Mince the garlic and chili. Add to a bowl along with the avocado and kidney beans and mash everything with a fork. Season with salt and pepper.
- Top the sweet potato with bean guacamole, some finely chopped chili and spring onions.
