Sweet Potato Wraps with Beans


  • 1 x sweet potato
  • 1 clove garlic
  • 1 pack sour cream
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ x red onion
  • ½ pack kidney beans
  • ½ pack corn
  • 3 x potato wrap
  • ½ pack spinach


  1. Dice the sweet potato and bake in the oven at 220 degrees celsius for about 15 minutes.
  2. Make the sour cream sauce. Mince the garlic and mix with sour cream. Season with salt and pepper. Set aside.
  3. Dice the red onion. Drain and rinse the kidney beans and corn in cold water.
  4. Mix the red onion, kidney beans, corn and baked sweet potato in a bowl. Season with salt and pepper.
  5. Fill the potato wraps with fresh spinach, roast sweet potato and bean mixture, and top with sour cream sauce.
  6. If you follow the weekly menu, save about 3/4 of the sour cream sauce for later. It'll be used in another dinner.
