Vegan mackerel in tomato

The first time I tried a recipe for vegan mackerel in tomato was @gronnmatportal's and now I have made my own version. A childhood favourite. I used to eat mackerel in tomato and drink chocolate milk for supper, but now I can have it vegan!

Ingredients

  • 1 can sun-dried tomatoes in oil
  • 1 ½ dl tomato puree
  • 2 tbsp apple cider vinegar
  • 1 tbsp sugar
  • 2 x nori
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 can kidney beans
  • 1 can jackfruit

Method

  1. Drain the liquid and rinse the jackfruit in a strainer. Tear into pieces and remove the hard parts and lumps.
  2. Put sun-dried tomatoes with oil, tomato paste, apple cider vinegar, sugar, crushed nori sheets, salt and pepper in a blender. Blend everything together.
  3. Put in kidney beans for protein and blend it in.
  4. Put the mixture in a bowl and finally add jackfruit for consistency. Fold it in with a spatula.
  5. Spread the spread on slices of bread and put on vegan mayonnaise. I recommend serving another glass of chocolate milk. Made with soya milk and oboy.
