
Beans are deliciously rich in taste, and the mash can be really spicy and tasty with chilli, garlic, fresh coriander, cumin or other spices. Ad this to the taco table, or use it as a topping on a slice of bread as it is.
Ingredients
- 4 tbsp sun flower oil
- 2 x yellow onion
- 400 g black beans
- ½ x red chili
- 2 clove garlic
- 1 tsp cumin
- 1 pinch salt
- 1 tsp lime juice
- 1 x fresh coriander
Method
- Put oil in a frying pan and place it on a medium heat. Put in the chopped onion, and let it fry until it is shiny and almost transparent.
- Let the beans drain in a colander - we use pre-cooked beans. Put them in the pan. Stir well, and mash the beans little by little towards the edge.
- Once you have a smooth mash of roasted beans and onions, you can add the other flavors. Add minced chilli and garlic, crushed spices and other flavourings, and let it simmer together with the beans for around 5 minutes. It's fine if the bean mixture looks a little fried, but it shouldn't be burnt.
- Season with salt and a dash of lime juice.
- Serve straight from the frying pan, or from a serving bowl. Sprinkle over chopped fresh coriander before serving, if you like.
