Ingredients
- 75 g bacon
- 1 clove garlic
- 1 x yellow onion
- 1 tbsp butter
- ΒΌ tsp chili flakes
- 300 g corn
- 5 dl water
- 1 x vegetable bouillon
- 1 dl cream
- Β½ x lime
- 2 tbsp fresh coriander
- 2 slices bread
Method
- Bake the bacon in the oven at 220 degrees celcius for 10-15 minutes.
- Cut garlic and onion and add to a pot together with butter. Fry until the onion turn soft.
- Addd chili flakes and corn and fry for another minute before adding the veggie broth. Let simmer for 15 minutes.
- Add the cream and mash the soup with a hand mixer until smooth. Add salt, pepper and lime juice to taste.
- Serve the soup warm with crispy bacon, fresh coriander and bread.
