Here in Norway salmon with boiled potatoes and classic cucumber salad is a very popular everyday food dish, and this was one of my father's big favourites. This dish brings back many good dinner memories from when I was a child.
Ingredients
- 3 x potatoes
- 1 dl water
- 3 tbsp vinegar 7%
- 1 tbsp sugar
- 1 pinch salt
- 1 pinch black pepper
- ¼ x cucumber
- 100 g salmon fillet
- ¼ x lemon
- 1 tbsp butter
- 2 dl cream
Method
- Boil potatoes in salted water.
- Combine water, vinegar, sugar, salt and pepper to a bowl. Slice the cucumber and place the slices to the bowl with the vinegar. Mix and set aside to the fridge.
- To a plate, place the fish and drizzle over the lemon juice. Season with salt and pepper and set aside for a minute or two. Melt butter to a frying pan and fry the fish until cooked through.
- Lower the heat and pour over the cream. Let it simmer for 1 or two minutes. You can add a little water from the potatoes to the cream sauce if you like. Enjoy with boiled potatoes and cucumber salad.
