Reindeer Risotto

Ingredients

  • 1 clove garlic
  • 1 x shallots
  • 50 g champignon
  • 50 g reindeer filet
  • 1 dl short grain rice
  • 5 dl beef broth
  • ½ tbsp butter
  • ½ dl heavy cream
  • 1 handful cheese

Method

  1. Cut the garlic, shallots and mushrooms into strips and fry in a pot with some butter until the mushroom has shrinkened.
  2. Add the reindeer meat, and fry for 2-3 minutes.
  3. Add the rice and fry for a couple of minutes before adding a splash of the beef stock. Stir and let simmer on medium heat until the rice has absorbed all the liquid. Repeat the step until there's no more stock left.
  4. Add butter, cream and some cheese (parmesan is amazing in this recipe). If you don't have any cheese on hand, you don't have to add any.
  5. Add salt and pepper to taste, and serve.
