Ingredients
- 2 dl chickpeas
- 1 pinch cumin
- 1 handful cherry tomatoes
- ½ x red onion
- 60 g pasta penne
- ½ x avocado
- 1 tbsp feta cheese
- 1 clove garlic
- 2 pinch salt
- 2 pinch black pepper
- 2 handful rocket
- 1 handful walnuts
Method
- Preheat the oven at 220 degrees celsius.
- Rinse the chickpeas in cold water, spread them out on a baking tray with salt, pepper and cumin. Bake for about 20 minutes.
- Chop up cherry tomatoes and red onion while you're cooking the pasta.
- Mash the avocado together with feta cheese, garlic, salt and pepper.
- Mix everything together in a bowl and top with roasted walnuts.
