
Tart and 💦moist💦 apple cake for Sunday coffee. In this recipe I have used small Norwegian apples to get the good sour taste, however any tart apple you have available works just fine.
Ingredients
- 50 g butter
- 2 x eggs
- 2 dl kefir
- 1 dl sugar
- 200 g plain white flour
- 1 tsp baking powder
- 1 x vanilla bean
- 5 x apple
- 1 tsp cinnamon
- 50 g hazelnuts
- dl brown sugar
- 1 pinch salt
Method
- First melt the butter, then add the eggs and kefir and whisk together until frothy.
- Then add sugar, plain white flour, baking powder and the seeds from the vanilla bean into the mixture.
- Preheat the oven to 180º C.
- Cut apples into small slices and caramelize them in a pan with sugar and cinnamon.
- Coarsely chop the hazelnuts and caramelize in a pan with brown sugar and a pinch of salt.
- Pour the cake batter into a bread pan and place apple slices and hazelnuts on top. Gently press them into the batter. Bake the cake at 180°C for 40-50 minutes.
