Ingredients
- 100 g sugar
- 100 g butter
- 3 x eggs
- 125 g gluten-free all-purpose flour
- ½ tsp cardamom
- 2 tbsp water
Method
- Whisk sugar and butter white. Stir in one egg at a time until you have a smooth mixture. Weigh flour and add cardamom. Add the flour mixture little by little to the batter until it is completely smooth. Add water and stir.
- Preheat the "krumkake" iron.
- Place a tablespoon of batter in the middle, close and press down. Hold for 2 seconds and release. When the "krumkake" is done you will hear a small click. Use a "krumkake" stick (preferably with a tongs). Be quick and roll the "krumkake". When it cools, it solidifies.
- Store the "krumkake" in an airtight box.
- If you can tolerate gluten, you can make this recipe with wheat flour.
