Fish Cake Sandwiches with Homemade Coleslaw


  • ½ x red onion
  • ½ x apple
  • 150 g coleslaw salad mix
  • 1 dl sour cream
  • 4 slices bread
  • 2 x fish cakes
  • 1 tbsp ketchup


  1. Thinly slice the red onion and grate the apple.
  2. Add grated apple and red onion slices to a bowl, together with the coleslaw mix. Next, add the sour cream and mix well. Season with salt and pepper.
  3. Add some oil or butter to a frying pan, and cook the bread on both sides, until golden.
  4. Next, cook the fish cakes until golden on both sides.
  5. Serve the fish cakes in toasted bread with slaw and ketchup.
  6. Note: if following the weekly menu, set aside about 2/3 of the coleslaw for other dinners this week.
