
Ingredients
- ½ x red onion
 - ½ x apple
 - 150 g coleslaw salad mix
 - 1 dl sour cream
 - 4 slices bread
 - 2 x fish cakes
 - 1 tbsp ketchup
 
Method
- Thinly slice the red onion and grate the apple.
 - Add grated apple and red onion slices to a bowl, together with the coleslaw mix. Next, add the sour cream and mix well. Season with salt and pepper.
 - Add some oil or butter to a frying pan, and cook the bread on both sides, until golden.
 - Next, cook the fish cakes until golden on both sides.
 - Serve the fish cakes in toasted bread with slaw and ketchup.
 - Note: if following the weekly menu, set aside about 2/3 of the coleslaw for other dinners this week.
