Ingredients
- 200 g sugar
- 400 g water
- 2 tbsp rose water
- 250 g thin rice noodles
- 1 x lime
Method
- Mix sugar and water in a saucepan. Bring it to a boil while stirring. Add rose water and mix well. Remove from heat and allow to cool. When the syrup has cooled, pour it into a bowl or something similar. Put it in the freezer for at least six hours, preferably overnight. The consistency of the syrup should be like sorbet when it hardens.
- Boil 2-3 liters of water in a pot and add the noodles. Let the noodles cook until they soften, about 3-4 minutes. Drain the noodles and rinse in cold water. Cut the noodles with scissors if you don't want them to be long.
- When serving, toss some of the noodles with some of the "ice sorbet". Finally add some lime juice.
- The noodles can be stored in cold water in the refrigerator for a few days. And the sugar mixture can be kept in the freezer for several weeks.
