Ingredients
- 2 clove garlic
- 1 tbsp ginger
- 2 x spring onion
- ¼ x red chili
- ½ x tomato
- 1 x carrot
- 45 g rice noodles
- 75 g beef strips
- 2 dl coconut milk
- 2 tbsp soy sauce
- ¼ x lime
- 1 tbsp fresh coriander
- 25 g cashews
Method
- Chop all the vegetables.
- Boil the rice noodles according to the instructions on the package.
- Fry the garlic, chili, ginger and the white part of the spring onion in a pan together with oil until the onion is soft. Add the beef and cook until browned.
- Add tomatoes, carrots, soy sauce and coconut milk, and simmer for about 10 minutes.
- Pour the rice noodles into the soup, and top with lime juice, fresh coriander, the green part of the spring onion (chopped) and crushed cashews.
