
Ingredients
- 1 clove garlic
- ½ x red onion
- 100 g cherry tomatoes
- 150 g pizza sauce
- 200 g white beans
- 3 x eggs
- 3 tbsp fresh basil
Method
- Mince the garlic and red onion, and halve the cherry tomatoes.
- Fry the garlic and red onion in a frying pan with a little oil or butter until the onion is soft.
- Add cherry tomatoes and continue to cook until they burst
- Add pizza sauce and white beans and simmer for about 5 minutes.
- Create holes in the tomato sauce for the eggs, and crack them into each hole. Reduce the heat, put the lid on, and let the eggs cook for about 7 minutes.
- Top with basil and season with salt and pepper. Serve with bread.
