Shakshuka with white beans

If you have tomatoes, garlic, spring onions (scallions), white beans, and eggs, you can make this delicious dish in no time. You can exchange white beans with chickpeas if you prefer.

Ingredients

  • 1 clove garlic
  • 1 x spring onion
  • 200 g diced tomatoes
  • 1 tsp sriracha
  • 380 g white beans
  • 1 x eggs
  • 6 x plum tomato

Method

  1. Mince the garlic and spring onions, then sauté them in a pan with oil or butter. Save a bit of the green part of the spring onion for garnish.
  2. Add chopped tomatoes and season to taste with sriracha sauce according to your preference. You can also use flavored chopped tomatoes with chili, basil, or similar. Let it simmer for a couple of minutes.
  3. Rinse the white beans, add them to the pan, and heat up before seasoning with salt and pepper.
  4. Create a small pocket in the sauce and add the egg. Put a lid on or cover it with a plate, and let the egg cook in the pan for 7 minutes. The egg can be slightly runny inside.
  5. Chop the plum tomatoes into pieces. Top the dish with tomatoes and minced spring onions. Serve with slices of good bread.
