 Squash and Corn Fritters

Do you have any leftover vegetables in the fridge that you would like to get rid of? Make fritters! Just grate it, mix it into a batter and fry it! They are also perfect for lunch the next day!

Ingredients

  • 1 x zucchini
  • 1 tsp salt
  • 1 x eggs
  • 1 clove garlic
  • 1 can corn
  • 60 g plain white flour
  • 1 tbsp parmesan
  • 1 tsp baking powder
  • 1 pinch black pepper

Method

  1. Grate the squash on a box grater, put it into a bowl and sprinkle over the salt. Leave for 10 min to extract the liquid from the squash.
  2. Use your hands and squeeze out any excess water, and return the squash to the bowl. Add the rest of the ingredients and mix well.
  3. Place dollops of the batter into a skillet with some oil and butter, and fry on a medium heat for 2-3 minutes on each side, until they are golden brown.
  4. Serve the fritters as is, or with a dollop of sour cream!
