Ingredients
- 200 g fusilli
- 200 g chicken breast
- 1 clove garlic
- ½ x yellow onion
- 3 tbsp sun-dried tomatoes
- 100 g champignon
- ¾ pack green pesto
- ½ pack rocket
Method
- Boil the pasta according to instructions on the package.
- Cut the chicken breast into pieces and cook in a frying pan until cooked all the way through.
- Mince the garlic, and slice the onion and mushrooms.
- Fry sun-dried tomatoes (chopped, if bought whole), garlic, onion and mushrooms in a frying pan until the onion is soft and the mushrooms have reduced in size.
- Drain the pasta and rinse in cold water until cooled properly.
- Add the pasta to a large bowl, along with the fried chicken, vegetables and pesto. Mix to combine.
- Add the rocket and season with salt and pepper.
