Ingredients
- 1 x eggplant
- 2 tbsp vegetable oil
- 20 tbsp ketchup
- 100 g ham
- 1 x red pepper
- 150 g cheese
Method
- Set the oven to 200 degrees celsius (top and bottom heat).
- Rinse an aubergine and cut into slices about 1 cm thick.
- Place the aubergine slices on baking paper on a baking sheet.
- Spread a little cooking oil over each aubergine slice, then a layer of ketchup (I used sugar-free ketchup) on each slice.
- Top with sliced ham, paprika and cheese.
- Bake in the middle of the oven for about 20 minutes until the aubergine is soft and the cheese has golden.
