Eggplant Mini Pizza

Ingredients

  • 1 x eggplant
  • 2 tbsp vegetable oil
  • 20 tbsp ketchup
  • 100 g ham
  • 1 x red pepper
  • 150 g cheese

Method

  1. Set the oven to 200 degrees celsius (top and bottom heat).
  2. Rinse an aubergine and cut into slices about 1 cm thick.
  3. Place the aubergine slices on baking paper on a baking sheet.
  4. Spread a little cooking oil over each aubergine slice, then a layer of ketchup (I used sugar-free ketchup) on each slice.
  5. Top with sliced ​​ham, paprika and cheese.
  6. Bake in the middle of the oven for about 20 minutes until the aubergine is soft and the cheese has golden.
