Lemon & orange cake with pear served with lingonberries, fresh mint and vanilla cream squeezed with lemon juice. Simple and heavenly!
Ingredients
- 150 g butter
- 2 x eggs
- 2 dl sugar
- 50 g milk
- 2 tsp baking powder
- 3 dl plain white flour
- 2 tsp vanilla powder
- 2 tbsp lemon juice
- 1 tbsp lemon zest
- 1 x orange
Method
- Set the oven to 180 degrees. Melt the butter and let it cool. Beat eggs with sugar until fluffy.
- Add butter, the rest of the ingredients and beat to a batter. Place a sheet of baking paper in a form and pour the batter over it. Peel the pear and place it deep on the cake. Squeeze a little orange juice on the pears.
- Bake in the middle of the oven for about 30 minutes. Garnish with lingonberries, finely chopped fresh mint. Tip! For a better serving of ice cream: scoop the ice cream and place the scoops on a deeper dish.
- Squeeze lemon juice over the ice cream and serve the cake immediately with lingonberries (optional) and fresh mint.
