Chocolate and Nut Cookies

Ingredients

  • 125 g butter
  • 2 dl sugar
  • 1 x eggs
  • 4 dl oats
  • 100 g dark baking chocolate
  • 50 g almond
  • 1 tsp sea salt flakes

Method

  1. Brown the butter. Then, set aside and let it cool.
  2. Add the sugar and eggs to a bowl. Whisk well before adding the cooled butter. Stir well.
  3. Make oat flour by grinding oatmeal in a blender until it reaches a floury texture.
  4. Coarsely chop the dark chocolate and almonds, and fold them into the cookie dough along with the out flour.
  5. Leave the dough to cool in the fridge for about 1 hour.
  6. Use two tablespoons to dig out the dough for each cookie and distribute them across a baking tray lined with parchment paper.
  7. Sprinkle the cookies with a tiny bit of flaked salt, if desired. Then, bake in the centre of the oven at 180 degrees celsius for about 10-15 minutes. Cool on a wire rack.
