- 1 x spring onion
- 1 x carrot
- ½ x tomato
- 2 x radishes
- 3 x eggs
- ½ dl coconut milk
- ½ tsp salt
- ¼ tsp black pepper

- Thinly slice the spring onions, carrots, tomatoes and radishes.
- Whisk together eggs, coconut milk, salt and pepper.
- Fry the vegetables in a frying pan with oil for a minute. Then pour in the egg mixture, reduce the heat and let the omelette cook with the lid on for about 7-8 minutes.
- Serve with some slices of bread.
