Bulgur Salad with Feta Cheese and Pomegranate

ingredienser

  • 160 g bulgur
  • ½ x cucumber
  • 65 g rocket
  • 30 g fresh mint
  • 1 x red onion
  • 400 g chickpeas
  • 1 x pomegranate
  • 100 g feta cheese
  • 65 g pistachios
  • ½ dl olive oil
  • 1 x lemon
  • ½ tsp salt
  • ½ tsp black pepper

fremsgangsmåte

  1. Prepare bulgur according to the directions on the package.
  2. Dice the cucumber, chop mint and pistachios, finely chop red onion and peel the pomegranate.
  3. Combine bulgur, cucumber, arugula, mint, red onion, chickpeas, pomegranate, feta cheese and pistachios to a big salad bowl.
  4. Prepare the lemon vinaigrette. Combine olive oil, lemon juice, salt and pepper. Add more salt and pepper to taste.
  5. Pour the vinaigrette over the bulgur salad and toss together. Enjoy!
