Ingredients
- 1 x sweet potato
- 1 clove garlic
- 1 pack sour cream
- 1 tsp salt
- ½ tsp black pepper
- ½ x red onion
- ½ pack kidney beans
- ½ pack corn
- 3 x potato wrap
- ½ pack spinach
Method
- Dice the sweet potato and bake in the oven at 220 degrees celsius for about 15 minutes.
- Make the sour cream sauce. Mince the garlic and mix with sour cream. Season with salt and pepper. Set aside.
- Dice the red onion. Drain and rinse the kidney beans and corn in cold water.
- Mix the red onion, kidney beans, corn and baked sweet potato in a bowl. Season with salt and pepper.
- Fill the potato wraps with fresh spinach, roast sweet potato and bean mixture, and top with sour cream sauce.
- If you follow the weekly menu, save about 3/4 of the sour cream sauce for later. It'll be used in another dinner.
