This soup is full of Thai flavors. Warm and comforting Thai noodle soup made with red curry paste, coconut milk and heat, and it’s the perfect balance of spicy, salty, sweet, and sour.
Ingredients
- 1 x yellow onion
- 3 clove garlic
- 3 tbsp red curry paste
- 400 g coconut milk
- 1 tbsp fish sauce
- 1 x lime
- 2 tbsp brown sugar
- 1 handful fresh coriander
- 1 tsp coconut flakes
- 1 tsp chili flakes
Method
- Pour oil into a large saucepan and place over medium high heat, and add the garlic, onion, chili and the red curry paste. Fry for 4 minutes.
- Add the coconut milk, fish sause and squeeze over some lime and add the brown sugar. Let it cook for 8-10 minutes, until the soup has a creamy consistent.
- Pour the soup in bowls and squeeze over some more lime. Top it off with fresh coriander, coconut flakes, dry chili flakes and some hot chili oil if you have.
