Pink Beetroot Waffles!

Ingredients

  • ½ x beetroot
  • 1 x ripe banana
  • 1 x eggs
  • 1 ½ dl oats
  • 1 tsp sugar
  • ½ tsp baking powder
  • 1 pinch salt
  • 1 ½ dl oat milk

Method

  1. Peel, dice and boil the beetroot until tender.
  2. Grind the oats in a blender until it has turned into flour.
  3. Mash beetroot and banana until smooth - in a blender or by hand. Add the egg and beat by hand.
  4. Add the oat flour, sugar, baking powder and salt. Dilute with oat milk.
  5. Leave the batter to rest and bubble for at least 10 minutes.
  6. Bake the waffles in a waffle iron with a bit of butter. Be careful not to open the iron until the waffles are done. If you do so, the waffles will separate.
  7. We recommend serving the waffles with vanilla yogurt or kesam, a handful of fresh fruit or berries and a drizzle of syrup on top!
