You might think that making pizza with kimchi is a somewhat strange combination, but this is really good! I recommend a cheese with a bit more flavor and fat, such as cheddar and/or Norwegian Jarlsberg, and feel free to sprinkle some parmesan for an extra kick. Experiment a bit to find your best flavor experience.
Ingredients
- 3 ½ dl plain white flour
- 1 pinch salt
- 1 ½ dl lukewarm water
- 15 g yeast
- 3 dl kimchi
- 150 g cheese
- 1 handful chives
Method
- Mix together the wheat flour and salt in a bowl. Measure the lukewarm water and add the fresh yeast. Stir until the yeast is dissolved. Knead everything together for about 10 minutes and set the dough aside for 30 minutes to rise.
- Preheat the oven to 250 degrees Celsius.
- Melt butter (about 1 tsp per serving) in a frying pan and sauté the kimchi for 1-2 minutes.
- Add some flour to the counter and push the dough outwards from the middle to create a thin base with a thick edge.
- Arrange cheese and kimchi on the pizza. Bake in the middle of the oven for 15 minutes, or until the cheese is golden.
- Top the pizza with minced chives before serving.
