Who can say no to a good grilled cheese sandwich? Mix whatever bits and bobs of leftover cheese you have in your fridge with some kind of spreadable cheese, add to a slice of bread, bake until golden and you`ll find yourself with the most wonderful little lunch (or breakfast or dinner). Most types of cheese will work, but I love mature cheeses for a bit of flavour. Here I´ve used truffle pecorino and comté and it was 10/10!
Ingredients
- 1 tbsp cream cheese
- 40 g cheese
- ½ tsp dijon mustard
- 1 tsp fresh herbs
- 1 pinch salt
- 1 pinch black pepper
- 1 tsp olive oil
- 1 slices bread
Method
- Preheat the oven to 200 °C fan.
- Add the cream cheese to a bowl.
- Stir in the cheese (grate the ones that can be grated and tear/cut other cheeses into chunks), mustard, chopped herbs, salt and pepper. If your cheeses are quite salty you can skip the extra salt.
- Add the olive oil to an oven proof dish. Arrange the bread in the dish and top with the cheese mix.
- Roast in the middle of the oven until melted and nicely coloured.
- I topped my grilled cheese with sliced figs, toasted pine nuts and a little honey, but you can add whatever you like. It`s also delicious as it is!
