Ingredients
- 3 tbsp butter
- 3 tbsp brown sugar
- 1 ½ tbsp sugar
- ½ tsp vanilla extract
- 1 x egg yolk
- ¼ tsp baking powder
- 1 dl gluten-free all-purpose flour
- 50 g dark chocolate
Method
- Preheat the oven to 200 degrees celsius.
- Whisk butter, brown sugar and white sugar together until nice and creamy.
- Stir in the egg yolk and vanilla essence.
- Add the gluten-free flour along with the baking powder.
- Chop the dark chocolate into chunks of your preferred size.
- Fold in the chocolate. Then, divide the dough into equal parts of about 8 cm (3 inches) in diameter on a baking sheet. Make them round and squeeze them into cookies, about 1 cm tall (1/2 inch).
- Bake the cookies for about 12 minutes. Watch them carefully to avoid overcooking. Cool on a rack once finished.
