Zucchini fritters is a perfect idea for a wonderful lunch og as a side dish with salmon or a delicious salad!
Ingredients
- 2 x zucchini
- 100 g plain white flour
- 2 x eggs
- ½ tsp salt
- ½ tsp black pepper
- 2 tbsp olive oil
Method
- Grate the zucchini and combine together with salt. Add it to a colander and let it drain for 10 minutes. Squeeze out as much liquid as you can.
- Add the zucchini, wheat flour, eggs, salt and pepper to a bowl. Combine.
- Heat olive oil in a pan. Scoop batter into the hot skillet and fry until golden brown, about 4 minutes per side.
- Serve with yoghurt & hot chilisauce. Enjoy!
