If you make this dinner – can I teach you a clever leftovers trick. You will use the leftovers you get from this dinner to make a delicious fish gratin! So here you will make two dishes in one go, save money and time.
Ingredients
- 3 x potatoes
- 180 g cod fillet
- 1 x shallots
- 2 dl milk
- ½ x lemon
- 1 handful dill
- 30 g butter
- 2 x broccolini
Method
- Start by boiling potatoes in lightly salted water.
- If the cod is not already salted, you can place the fillet on a tray and cover with plenty of salt. Leave it for 10 minutes.
- Sauce: Finely chop the shallot and fry it until soft to a frying pan with butter. Add the wheat flour and stir well to make a smooth mixture. Gradually add the milk, stirring constantly to avoid lumps. Let the sauce simmer for approx. 3 minutes, until it thickens.
- Lower the heat. Add lemon juice, minced dill and cubed butter and stir until well combined. Make sure it doesn't boil. Add a bit of liquid from the fish to get a more fluid sauce if you wish.
- To another pot, bring water to a boil. Blanch the broccolini in boiling water for exactly 3 minutes from the time the water boils again. Catch it and serve immediately with fish, boiled potatoes and sauce.
- In a clean box with a lid, set aside leftover fish, potato and sauce. Store in the refrigerator. You will use this to make fish gratin later in the week.
