Beetroot Pasta

Beetroot Pasta looks smashing and is super easy to make. Cut the beetroot in cubes to reduce cooktime. Add pastawater if the sauce gets to thick.


  • 2 x beetroot
  • 400 g pasta penne
  • 150 g feta cheese
  • 3 clove garlic
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp thyme
  • 2 tbsp olive oil
  • 1 handful parsley


  1. Boil pasta after instructions on package. Set aside one cup of pasta water.
  2. Add the rest of the ingredients to a casserole (except the parsley). Place it in the oven 200°C for 30 mins.
  3. Mix the oven baked veggies to a blender until smooth. Add pastawater if consistency is to thick. In a bowl blend pasta and the sauce. Serve topped with chopped parsley.
