Beetroot Pasta looks smashing and is super easy to make. Cut the beetroot in cubes to reduce cooktime. Add pastawater if the sauce gets to thick.
Ingredients
- 2 x beetroot
- 400 g pasta penne
- 150 g feta cheese
- 3 clove garlic
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp thyme
- 2 tbsp olive oil
- 1 handful parsley
Method
- Boil pasta after instructions on package. Set aside one cup of pasta water.
- Add the rest of the ingredients to a casserole (except the parsley). Place it in the oven 200°C for 30 mins.
- Mix the oven baked veggies to a blender until smooth. Add pastawater if consistency is to thick. In a bowl blend pasta and the sauce. Serve topped with chopped parsley.
