Ingredients
- 4 dl plain white flour
- 8 tbsp butter
- 4 tbsp water
- ½ x red onion
- 100 g cherry tomatoes
- 2 tbsp fresh basil
- 4 x eggs
- ½ dl milk
- ½ tsp salt
- ¼ tsp black pepper
- 50 g mozzarella
- ½ tsp salt
Method
- Combine flour, salt and cold butter in a food processor or by hand until you have a crumbly dough.
- Dilute with cold water until you have a perfectly smooth dough.
- Let the dough rest in the fridge for about 20 minutes.
- Roll the dough out on a baking sheet and place it on a baking tray. Use a fork to pierce the dough several places across the bottom to allow air to escape while cooking.
- Pre-bake the dough at 200 degrees celsius for about 10 minutes. Prepare the other ingredients.
- Chop red onion, cherry tomatoes and basil.
- Whisk together eggs, milk, salt and pepper and grated mozzarella in a bowl. Then add the chopped vegetables.
- Take the pie crust out of the oven and pour the egg-mixture into it. Bake for about 25-30 minutes.
