Ingredients
- 2 clove garlic
- 2 x shallots
- 1 x carrot
- 1 x celery sticks
- 20 x cherry tomatoes
- 1 tsp basil
- 2 l water
- 2 tsp salt
- 200 g minced meat
- 1 dl red wine
- 1 pinch black pepper
- 30 g parmesan
- 100 g spaghetti
Method
- Fry minced garlic and shallots in a frying pan with olive oil. Dice the carrot and the celery stick into small pieces and add it to the pan. Add chopped tomato and basil. If preferred, use fresh basil.
- Boil water to a pot, add salt and add spaghetti. You will use the pasta water in the Bolognese sauce, so do not pour it out.
- Pasta water is rich in starch and is suitable for use in other sauces as well. If you want, you can save it in the fridge for later.
- Make room in the frying pan to fry the meat, then add the minced meat. Fry and chop the meat into small pieces and stir everything together. If you have some leftover red, this is the perfect time to use it. Add the wine and bring to boil. You can make this dish without red wine, but I strongly recommend you add some to level up the taste experience.
- Add pasta water depending on how liquid you want the sauce. Add grated parmesan and season to taste with pepper. Add Simmer for about 3 minutes while stirring. Serve the spaghetti with bolognese and finely chopped fresh herbs if you have.
