Fried udon is a big favorite with us. We love the chewy and soft texture, and how easy it is to come up with new variations that mean we never get bored.
Ingredients
- 800 g udon noodles
- 400 g minced meat
- 200 g champignon
- 4 clove garlic
- 1 x red pepper
- 1 x carrot
- 2 tbsp neutral oil
- ½ tsp black pepper
- 2 tbsp light soyasauce
- 1 tbsp dark soyasauce
- 1 tbsp oyster sauce
- 1 tbsp chili oil
- 1 tbsp sugar
- ½ tsp salt
Method
- Start by cooking the udon until it just releases from the mold. Rinse well in cold water. Also mix together the sauce, taste for how much chilli oil you want, and cut the vegetables.
- Heat oil in a deep pan and saute garlic until golden on medium high heat. Add minced meat and pepper and fry until the meat is almost cooked through.
- Add mushrooms and carrot. Bake for approx. 2-3 minutes more (if you want softer paprika, you can add them here too).
- Add cooked udon and mix well so that the noodles are warm again for a few minutes.
- Add the sauce and paprika. Toss the noodles and the sauce well together for 2-3 minutes, then it is ready to serve.
