Lumpia, also called Lumpiang Shanghai are Filipino spring rolls. Great as a starter or snack, and very easy to make!
Ingredients
- 1 x yellow onion
- 2 clove garlic
- 4 x water chestnut
- 2 x spring onion
- 2 tbsp fresh coriander
- 300 g pork mince
- 1 tsp grated ginger
- 2 pinch salt
- 2 pinch black pepper
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 pack phyllo dough
- 1 x carrot
Method
- Serve with sweet chili sauce!
- Finely chop the onion, garlic and water chestnuts. Coarsely grate the carrot on a grater, and roughly chop the spring onions and coriander. Mix this together with the rest of the ingredients in a bowl.
- Place the filling on the spring roll sheets and roll into long spring rolls. (The easiest way is to use a piping bag, if you have this). Brush with a little water or egg to glue the edges together.
- Heat neutral oil to 180-200 C, and fry the lumpia for 4-5 minutes, until they are golden and crispy.
