If you are looking for a delicious quick fish soup, you must try this! With delicious autumn vegetables and Norwegian Salma salmon you get a nutritious and tasty experience.
Ingredients
- ½ x celery root
- 1 x fennel
- 1 x parsnips
- 1 x parsley root
- 3 x shallots
- ½ x leeks
- 5 dl fish stock
- 3 dl heavy cream
- 2 dl dry white wine
- 100 g butter
- 400 g salmon of sashimi quality
- 1 handful chives
Method
- Rinse, clean and dice the vegetables. Sauté the them lightly in butter and pour over the white wine, reduce until half the liquid has evaporated.
- Add fish stock and cream and simmer until the vegetables are al dente.
- If you want a slightly thicker soup, you can add cornstarch. Season with salt and pepper.
- Slice the SALMA salmon into thin slices. Choose for yourself whether you want to add the salmon to the soup at the end of the cooking time or whether you want to top the soup with raw slices. Sprinkle to taste with some fresh herbs and chives.
