Avocado Carbonara

Ingredients

  • 3 slices bacon
  • 1 clove garlic
  • Β½ x avocado
  • ΒΌ dl heavy cream
  • 1 x egg yolk
  • 25 g parmesan
  • 100 g spaghetti

Method

  1. Boil spaghetti in salted water.
  2. Dice and fry the bacon in a pan.
  3. Mince the garlic and add to a bowl with the avocado, egg yolk and heavy cream. Mash with an immersion blender or in a blender/food processor.
  4. Drain the spaghetti, remove the pot from the heat and combine the spaghetti with fried bacon, avocado sauce and grated parmesan. Enjoy!
