A delicious warm vegetable stew with nutritious quinoa. This tastes really good. Serve with pita bread.
Ingredients
- 1 dl quinoa
- ¼ x red onion
- 1 clove garlic
- 1 x celery sticks
- 2 dl diced tomatoes
- 2 dl water
- ½ x vegetable bouillon
- ½ pack mixed beans
- ½ x potatoes
- 1 tsp sriracha
- 2 tbsp sour cream
- ½ x vegetable bouillon
- 2 dl water
Method
- Rinse the quinoa in cold water and put it in a saucepan (preferably with a thick bottom). Grind the seeds until all the water has evaporated. Add water and vegetable broth and bring to a boil so that the vegetable broth dissolves. Lower the heat and simmer for 15 minutes under a lid.
- Chop red onion and garlic. Add olive oil in a pot and fry the onion until soft. Add chopped celeriac and saute.
- Add chopped tomatoes, water, vegetable bouillon and sriracha. Bring to a boil.
- Dice the potato and cook it tender to the pot. About 20 minutes.
- Serve with salad and sour cream as a topping, preferably with pita bread as a side dish.
