Ingredients
- 1 clove garlic
- ΒΌ x leeks
- 1 x potatoes
- Β½ x tomato
- 3 x eggs
- 1 pinch salt
- 1 pinch black pepper
- 50 g feta cheese
Method
- Mince the garlic and leaks, and cut potato and tomato into thinly slices.
- Fry garlic, leaks and potatoes in a frying pan with lots of olive oil.
- Whisk together the eggs with salt and pepper and pour over in the frying pan. Top with tomatoes and feta cheese, and fry under a lid on medium heat for about 5-8 minutes.
- Serve the omelette warm.
