Ingredients
- 1 x salmon fillet
- 100 g fusilli
- ½ pack fresh basil
- 2 clove garlic
- 20 g pine nuts
- 1 pinch salt
- ½ dl olive oil
- 50 g parmesan
Method
- Place the salmon fillet on a baking tray covered with baking paper, season with salt and pepper and bake in the middle of the oven at 215 degrees celsius for about 10-15 minutes.
- Boil the pasta in salted water.
- Make the pesto by adding fresh basil leaves, garlic, pine nuts, olive oil and salt to a mortar or food processor. Blend until the pesto reaches your desired level of smoothness.
- Grate parmesan and stir into the pesto.
- Fold half of the pesto into the cooked pasta. Serve with the salmon fillet.
- If following the weekly menu, set aside half of the pesto for another dinner later this week.
