Homemade Pesto Pasta with Salmon

Ingredients

  • 1 x salmon fillet
  • 100 g fusilli
  • ½ pack fresh basil
  • 2 clove garlic
  • 20 g pine nuts
  • 1 pinch salt
  • ½ dl olive oil
  • 50 g parmesan

Method

  1. Place the salmon fillet on a baking tray covered with baking paper, season with salt and pepper and bake in the middle of the oven at 215 degrees celsius for about 10-15 minutes.
  2. Boil the pasta in salted water.
  3. Make the pesto by adding fresh basil leaves, garlic, pine nuts, olive oil and salt to a mortar or food processor. Blend until the pesto reaches your desired level of smoothness.
  4. Grate parmesan and stir into the pesto.
  5. Fold half of the pesto into the cooked pasta. Serve with the salmon fillet.
  6. If following the weekly menu, set aside half of the pesto for another dinner later this week.
