 French Onion Soup

A good example of a dish made with inexpensive ingredients, but tastes like a million bucks, is French onion soup! A real classic that is super delicious, and with lots of oozy gooey melted cheese! What's not to like??

Ingredients

  • 1 kg yellow onion
  • 1 tbsp butter
  • 1 tbsp neutral oil
  • 3 clove garlic
  • 1 tbsp plain white flour
  • 1 handful fresh thyme
  • 2 x bay leaf
  • 1 dl dry white wine
  • 1 ½ l beef stock
  • 2 tbsp soy sauce
  • 4 slices bread
  • 200 g grated cheese (for example comté or gruyere)

Method

  1. Peel and slice all the onions. Fry the onion with butter and oil in a saucepan over medium high heat for 10-12 minutes, or until the onion is dark golden. (It's important to fry it until it is well caramelized, then the soup will definitely have the best taste!)
  2. Add the garlic and continue to cook for a couple of minutes. Stir in the flour and then add the thyme, bay leaves, white wine and beef stock. Let the soup simmer for half an hour.
  3. While the soup is cooking, you can toast some slices of bread with a little olive oil in the oven, until they are golden and crispy.
  4. Pour the soup into bowls (ovenproof ) and add a layer of grated cheese, then the toasted bread and then some more cheese!
  5. Gratinate the soup in the oven at 220 C for 10-12 minutes, until the cheese is melted and golden.
  6. Eat the soup immediately and enjoy!
