A good example of a dish made with inexpensive ingredients, but tastes like a million bucks, is French onion soup! A real classic that is super delicious, and with lots of oozy gooey melted cheese! What's not to like??
Ingredients
- 1 kg yellow onion
- 1 tbsp butter
- 1 tbsp neutral oil
- 3 clove garlic
- 1 tbsp plain white flour
- 1 handful fresh thyme
- 2 x bay leaf
- 1 dl dry white wine
- 1 ½ l beef stock
- 2 tbsp soy sauce
- 4 slices bread
- 200 g grated cheese (for example comté or gruyere)
Method
- Peel and slice all the onions. Fry the onion with butter and oil in a saucepan over medium high heat for 10-12 minutes, or until the onion is dark golden. (It's important to fry it until it is well caramelized, then the soup will definitely have the best taste!)
- Add the garlic and continue to cook for a couple of minutes. Stir in the flour and then add the thyme, bay leaves, white wine and beef stock. Let the soup simmer for half an hour.
- While the soup is cooking, you can toast some slices of bread with a little olive oil in the oven, until they are golden and crispy.
- Pour the soup into bowls (ovenproof ) and add a layer of grated cheese, then the toasted bread and then some more cheese!
- Gratinate the soup in the oven at 220 C for 10-12 minutes, until the cheese is melted and golden.
- Eat the soup immediately and enjoy!
