Feta Cream with Tomato, Cherries, Peas and Dill

Nothing is quite like when the ingredients are in peak season and need minimal work and preparation in order to achieve wonderful flavours! Here I`ve prepared a simple little salad with cherries, tomatoes, fresh peas and dill, but other summer fruit and veggies such as melon, peaches and cucumbers will also work wonderfully with the feta cream. If you can`t get hold of fresh peas you can use frozen.

Ingredients

  • 100 g feta cheese
  • 2 tbsp olive oil
  • 2 tbsp creme fraiche
  • 1 pinch salt
  • 1 pinch black pepper
  • 3 handful cherry tomatoes
  • 1 handful cherries
  • ½ x organic lemon
  • 1 handful fresh peas
  • 1 handful fresh dill
  • 1 pinch chili flakes

Method

  1. Add the feta to a bowl and crumble with a fork. Stir in the creme fraiche. Season with a little salt, pepper and olive oil.
  2. Slice the cherry tomatoes into halves and add to a bowl.
  3. Cut the cherries into halves and remove the pits. Add to the bowl with the tomatoes. Season with a little olive oil, lemon juice, salt and pepper.
  4. Bring salted water to boil. Blanche the peas for about 10 seconds before shocking in ice cold water. If you are working with frozen peas let them boil a little shorter.
  5. Season the peas with a little olive oil, lemon juice and salt.
  6. Add the feta cream to a plate and top with the cherries, tomatoes and peas. Finish with fresh dill, a litte olive oil, a sprinkle of salt and a pinch of chili flakes.
