Fortune Cookies

Do you want to make edible Christmas presents for Christmas, or just have something good in the jars at Christmas time? Then fortune cookies with lovely sayings and words of wisdom are absolutely perfect for the nice waiting time πŸ™‚ These super crispy and tasty biscuits that you often get in Chinese restaurants after your meal are actually surprisingly fun and easy to make at home. 1 serving makes 18 cakes.

Ingredients

  • 100 g sugar
  • 2 x egg white
  • 2 tbsp water
  • 50 g butter
  • 75 g plain white flour
  • 1 tbsp corn starch
  • 1 tsp vanilla sugar
  • ΒΌ tsp salt

Method

  1. Distribute 1 tablespoon (please use a measuring spoon for specific measurements. 1 tablespoon = 15 ml) to each cookie on the baking tray. Use a tablespoon to spread the batter to an approx. 10 diameter large circle.
  2. Roast in the middle of the oven for approx. 8-9 minutes. Note that different ovens may vary slightly in the cooking time. It is therefore important to take care of the last few minutes so that they are neither undercooked nor overcooked.
  3. Ready-baked biscuits should not stick to the glass when we shape them over a glass.
  4. You want to achieve a golden brown crust all around and the middle part should be a little lighter in color, but still just cooked, to achieve the crispy crunch when they are cooled. Feel free to experiment with the first ones to find the right time.
  5. When the biscuits are finished baking, we have to be a bit quick before they harden πŸ™‚ Have a glass ready. Take the biscuits out of the oven and flip them over to the opposite side with a spatula. Place a "fortune" note in the center of the cookies.
  6. The biscuits are very hot, so please wear gloves to release the heat. Only pinch the edges together into a semi-circle. Hold each end and fold them inwards over the edge of a glass to shape them.
  7. Place the biscuits in a muffin tray or small bowls so that they hold their shape and do not fall apart. Allow these to cool completely before storing them in an airtight jar.
  8. It is incredibly nice to serve these at Christmas time with little messages inside the cakes. They are also perfect as edible Christmas presents πŸ™‚ Keep good and crispy for at least 2 weeks in an airtight jar (preferably in a slightly cool room).
  9. Start by making all the "fortune" notes you want to have in the biscuits. You can easily find good texts by Googling, or create your own. Here I have chosen a good mix of nice sayings and Christmas song lyrics. Write by hand or on word and cut the notes into 1-2Γ—8 cm small notes.
  10. Preheat the oven to 170 degrees above and below the heat. Whisk together the sugar and egg whites with a balloon whisk until well combined. Add water, melted butter and stir. Mix flour, cornstarch, vanilla sugar and salt. Sift it into the batter and whisk until just combined.
  11. Use a frying pan and cover with a nonstick baking foil/mat (silicone baking mat also works). We only make TWO cookies at a time to prevent them from hardening too quickly.
