 Crispy Rice with Spicy Salmon

These bites are perfect as a small appetizer or snack. This recipe makes enough for about 20 bites, but trust me, they will disappear before you know it...

Ingredients

  • 250 g sushi rice
  • 2 ½ dl water
  • 1 tsp salt
  • 2 tbsp sugar
  • 60 g rice vinegar
  • neutral oil
  • 200 g salmon of sashimi quality
  • 4 tbsp chili mayonnaise
  • 1 tsp sesame oil
  • 1 tsp soy sauce
  • 1 x lime
  • spring onion
  • sesame seeds

Method

  1. Start with the rice: Rinse the rice 4-5 times until the water runs clear. Put rice and water in a pot and bring to the boil. Turn down to medium heat and cover. Let it simmer for 10 min. After 10 min, turn down to low heat and leave for another 10 min.
  2. While the rice is cooking, make the marinade: Bring salt, sugar and rice vinegar to a boil (you can also use white wine vinegar or similar), and carefully mix the marinade into the cooked rice.
  3. Spread the rice flat in a tray covered with plastic wrap, and leave to cool until it has set, at least 1 hour. Cut into bite-sized pieces and fry in oil for 2-3 minutes on each side until golden.
  4. Cut the salmon into small cubes. Stir the salmon together with chilli mayonnaise (3 tbsp mayonnaise + 1 tbsp sriracha), sesame oil, soy sauce and a little limejuice.
  5. Spread the salmon mixture on the fried rice bites and top with some spring onions and sesame seeds!
