Gnocchi is normally made with potatoes but works great with cauliflower as well. You don't have to use fresh cauliflower. Frozen works fine. Use whatever sauce you want. Everything from melted butter to pesto works great.
Ingredients
- 1 x cauliflower
- 2 dl plain white flour
- 1 tsp salt
- 4 tbsp green pesto
Method
- Steam the cauliflower for 7 minutes
- Squeeze out the liquid from the cauliflower using a kithen towel
- Mix the cauliflower with flour and salt in a blender until smooth. This takes around 2-3 minutes.
- Knead the dough until firm. Add more flour if to sticky. Roll and cut into 1 cm (1/2 inch) bites.
- Sear the Gnocchi in a skillet with butter or oil on medium high heat for 3-4 minutes on each side. Serve with sauce of your choice.
