Gluten-free Norwegian «Krumkaker»

  • 100 g sugar
  • 100 g butter
  • 3 x eggs
  • 125 g gluten-free all-purpose flour
  • ½ tsp cardamom
  • 2 tbsp water

  1. Whisk sugar and butter white. Stir in one egg at a time until you have a smooth mixture. Weigh flour and add cardamom. Add the flour mixture little by little to the batter until it is completely smooth. Add water and stir.
  2. Preheat the "krumkake" iron.
  3. Place a tablespoon of batter in the middle, close and press down. Hold for 2 seconds and release. When the "krumkake" is done you will hear a small click. Use a "krumkake" stick (preferably with a tongs). Be quick and roll the "krumkake". When it cools, it solidifies.
  4. Store the "krumkake" in an airtight box.
  5. If you can tolerate gluten, you can make this recipe with wheat flour.
