
Do you have any leftover vegetables in the fridge that you would like to get rid of? Make fritters! Just grate it, mix it into a batter and fry it! They are also perfect for lunch the next day!

- 1 x zucchini
 - 1 tsp salt
 - 1 x eggs
 - 1 clove garlic
 - 1 can corn
 - 60 g plain white flour
 - 1 tbsp parmesan
 - 1 tsp baking powder
 - 1 pinch black pepper

- Grate the squash on a box grater, put it into a bowl and sprinkle over the salt. Leave for 10 min to extract the liquid from the squash.
 - Use your hands and squeeze out any excess water, and return the squash to the bowl. Add the rest of the ingredients and mix well.
 - Place dollops of the batter into a skillet with some oil and butter, and fry on a medium heat for 2-3 minutes on each side, until they are golden brown.
 - Serve the fritters as is, or with a dollop of sour cream!
