Greek Gyros in Pitabread

Nothing beats eating a proper Greek gyros surrounded by azure blue waters, olive trees and white stone houses with blue window shutters, but it taste almost as good when you make it at home! This recipe requires a lot of time and love, but isn´t that just a perfect excuse to invite friends or family over for a big, delicious Mediterranean feast? The recipe makes enough to fill 8 large pita breads.

ingredienser

  • 1 ½ kg pork shoulder
  • 1 x potatoes

    Marinade:

  • 1 tsp chiliflakes
  • 1 tbsp dried thyme
  • 1 tbsp dried oregano
  • 1 tbsp dried rosemary
  • 1 tbsp smoked paprika powder
  • 1 tbsp cumin
  • 1 tsp black pepper
  • 1 tsp salt
  • 2 tbsp white wine vinegar
  • 1 tbsp honey
  • 1 ½ dl olive oil
  • ½ x red onion
  • 2 clove garlic, minced
  • ½ x lemon, the juice

    Tzatziki:

  • 1 x cucumber
  • 3 dl greek yogurt
  • 2 tbsp olive oil
  • 1 clove garlic, minced
  • 2 tbsp white wine vinegar
  • 1 pinch salt
  • 1 pinch black pepper

    For serving:

  • 8 x pita breads
  • 4 x tomatoes, sliced
  • ½ x cucumber
  • 1 x red onion
  • 1 Bag fries
  • 1 handful parsley

    Other:

  • 2 x yellow onion

  1. Slice the meat in thick even pieces. Make the marinade, and mix the meat in it. Cover and marinate for at least 4 hours in the fridge, ideally overnight.
  2. Make a vertical skewer stand by cutting a potato in half, and lay them flat-side down in a ovenproof baking dish. Place a wooden skewer in each half of the potato so both of the skewers stands upright and parallel. If you are making a lot of gyros meat, I recommend to make two vertical skewer stands to make sure the meat is stable while cooking.
  3. Stack the meat on the skewer, one slice at a time. You can finish the meat skewer by "locking" the meat with a piece of onion at the top. Cook in the oven at 175℃ (350°F) for 1 hour and 30 minutes. Turn the pan a couple of times during cooking to make sure it cooks evenly. Cover with aluminum foil if the meat develops to much color.
  4. Make the tzatziki: Grate a cucumber and squeeze out as much liquid as possible. Combine the grated cucumber with the rest of the ingredients, and garnish with some olive oil and chopped parsley.
  5. When the meat is done, let it rest a couple of minutes before you use a sharp knife to «shave» off thin slices. Toss the meat in the juices in the roasting dish and cover with aluminium foil to keep it warm for serving.
  6. Prepare French fries and make or heat up pitabreads.
  7. Fill the pita bread with tzatziki, gyros meat, tomato, cucumber, red onion and French fries. This dish is great for serving family-style! Just place everything on the table and let everyone to build their own pitas!
