Grilled Pineapple and Lime-Marinated Pollock with Rice and Pineapple Salsa

Tilberedning

1. 1

In this dinner we'll use the pineapple salsa and pineapple peel/shell that we saved from earlier in the weekly menu.

2. 2

Mix together taco seasoning and lime juice and pour over pollock. Marinate for at least 20 minutes.

3. 3

Boil rice according to the instructions on the package.

4. 4

Slice the pineapple peel in half, and place the fish fillet in between. Grill the fish inside the pineapple for about 15 minutes. Flip halfway through.

5. 5

Serve the pollock over rice. Top with leftover pineapple salsa.
